Chocolate nougat

In my experiments with Thermomix, yesterday was the Nougat’s  day. It was too tempting to have several recipes for nougat and no experience with them. So yesterday I tested them, but the truth, not everything went as well as I wanted. I did or tried to do three kinds of nougat: Jijona, chocolate with nuts and chocolate with a lot of things (this is the best)

The Jijona’s Nougat  was a total failure, frankly when I read the recipe,  I found a little odd that it  would work with so little ingredients  and it was. Now in my kitchen I have a bowl full of a compound halfway  the wrong set mortar and sawdust made from toasted almonds and powdered sugar. I have to find a way to recover it.

Instead of chocolate nougat were successful. We split.

Chocolate nougat with nuts

This nougat is overwhelming. I figure I have for every Christmas, even though I cooked a single bar. But it is very good.

To do so requires.

250 gr chocolate fondant

250 gr milk chocolate

80 gr lard

200 gr shelled walnuts

The issue is as simple as:

Put both chocolates in the Thermomix, cut into large pieces. 30/40 seconds Grind progressive speed 5 to 10. This means that we must speed up as it  go grinding, by ear.

Add the lard, 6 minutes 37 degrees speed 3 (in the recipe put speed 2, but did not mix well, better to 3)

Add the nuts (I would cut up a bit before putting them) 15 seconds Speed 3

Put mixture in an aluminum pan and covered it with plastic wrap.

Press the mixture to fill the corners of the mold. Tapade the mold with the film and expect it to solidify, if you are in a hurry, like me, you can put in the fridge.

OK, Let’s go for the latter.

Chocolate nougat with a lot of things

To do so requires

100 gr shelled walnuts

100 gr toasted almonds

100 gr toasted hazelnuts

100 gr puffed rice (krispies)

80 gr lard

250 gr chocolate fondant

250 gr milk chocolate

Grind the walnuts, almonds and hazelnuts, plus or minus 5 seconds, speed 4

Remove mixture to a bowl and add puffed rice, stir and set aside

Pour the chocolate cut into chunks in the Thermomix 30/40 seconds grinding speed 5 to 10, as in the previous recipe

Add lard 6 minutes 37 degrees speed 3

Pour chocolate over nuts and mix.

When well blended pour into molds as well as in the previous recipe.
