Eggplant at Sebastià’s way

Surely these eggplants must have other names, but I know this recipe thanks to my friend Sebastian and from that day these are the “Eggplant at Sebastià’s way”
A dish so stupid and easy to make as useful and tasty. You will need:
Eggplants (I’ve used five like those in the photo)
salt
garlic (5 cloves of garlic)
Oil for frying
a s/2 Kg can of crushed natural tomato
Oregano, and
a microwave

Chop the eggplant and put them in a bowl with salt in order to let the water go.

Leave the eggplant standing for two hours, more or less. After dry them very well, the best is to do it with paper towels.
Crush the garlic cloves


Fry the eggplant, I’ve done it in the fryer. If you will not desire leaving the kitchen like a mess, it is very important to dry them well, very well.
After, place the eggplant in the bowl with the garlic and stir them

Add the tomato and the oregano

Mix well and put in the microwave for 10 minutes, covered. Power: which you use for cooking.

After 10 minutes, stir them again and microwave for 10 minutes more, covered. And that’s all

Serve as an accompaniment to meats, as a base for sauces also with pasta. It keeps several days in the fridge, but so you can freeze like I do.
