Sacher on Monkey’s day

Today I called a friend who lives in Madrid.

OK I left you, I wouldn’t disturb you anyway I have a lot of things to do. Probably I make profit of that wonderful sun and I will go to the beach. See you my friend

Today on Madrid, Andalucia most of Spain is a working day but not in Catalonia. Today is monkey’s day, but our monkey es sweet.

“Mona de Pascua” is a traditional Easter cake which is eaten on Easter Monday in places like Catalonia and Valencian Community.

The name Mona comes from Munna and old Arabic word which refers the food present that servants gave to their lord a long time ago when Muslims were in Spain. Nowadays the Mona is also a present

which godparents gave to their godchildren as a present on Easter Mondaymeans present

In origin the “Mona” is a plain cake with hard-boiled eggs but nowadays specially in Catalonia the eggs have been replaced by chocolate figures extremely elaborated and expensive.

Those ones you can see below cost 45 and 55 euros.

That’s only the chocolate figures cost even you must add 20 or 30 euros more corresponding to the cake usually a cream cake.

My abilities don’t allow me those culinary sophistication, but I’ve baked a cake, not exactly a “mona” Today I baked my first Sacher.

Tremendous success
You will need:

chocolate 150 gr.

Butter 150 gr.

sugar 100gr

Grinded almond 100 gr

four eggs

Baking powder 20 gr.

First of all whisk the whites. Like that. Note. the photo has not problems, this is the test if they are well whisked or not. Whole merit for my food processor

Beat yolks and sugar until they look like that.

Following, according to this order, add chocolate melted with butter, almond, baking powder and in the end the whisked whites.

Oven for 25 minutes more or less 180ª, and it will look like that.

Now is time for chocolate cover.
You will need:

chocolate 100gr

Butter 50 gr and

100 ml  whipping cream

Melt chocolate with butter, add the whipping cream, if it is necessary (too hot) put in the fridge  for a while then you can try to cover the cake. The first one probably will be a disaster after 20 cakes it would be easier.

OK this is a Sacher, but today we celebrated my daughter’s birthday and I go to great pains to do it properly, but I am a disaster managing the piping bag and I’ve chosen to be creative

I’ve melted 100gr of chocolate without butter, only chocolate and I put it on a cooking paper, like that.

Later I’ve made something like that with a fork

I’ve forgot to take one shoot.

I add some candies, it could be m&m, I’ve put another paper above and I’ve put it in the fridge

when it was absolutely cold I’ve removed the papers, I broke the chocolate in several pieces and I put someone over the Sacher and other in a fashion style (MOMA’s style) I’m sure if Ferran Adrià do that it receives an award.

That was the result.

Some icing sugar an attempt to write my daughter’s name (I must practice with piping bag) and that’s all.

To accompany these Sacher I tried a great piano performer. When I was a child I had the great fortune to attend a concert of that old man who jumped in front his piano.
