Gató, Mallorca’s almond cake with Joan Pons

Yesterday afternoon rained in Barcelona and I made the most of my time straightening the pantry. Just behind the lentils I found a jar full of grind almond.

I needed more space and in consequence ….

Let’s go, today Gató (almond cake a typical dessert on the Mallorca island). The Gató is a special cake because to cook it we don’t need flour or baking powder neither.

Some people use walnut, in Mallorca there are a lot of almond tree but walnut trees in fact I didn’t see. But if you don’t have almond you can cook it with wallnuts with a small change, later I tell you what.

To cook this Gató I needed:

250 grams raw almond ground (exactly that I found)

200 gram sugar. My friend Neus use 250 grams, but in my opinion it tastes too sweet.

Grated lemon rind

One small spoon (your teaspoon) of vanilla (if you don’t have it, doesn’t happen

The Gató is a typical Mallorca’s dessert and for this reason today I tried a great beautiful Mallorca’s voice.

In fact, today’s singer comes from Menorca the north island in the Balearic archipelago.

Probably Joan Pons, is the baritone who has sung more times the role of Giorgo Germont from Verdi’s opera La Traviata.

Now you can listen the aria “Di Provenza al mare” I think it fits very well with today’s dish because if you go from Pronveza to the sea a bit more far to South, in the middle of the sea, you will find Menorca, Mallorca and Ibiza.

With you a good singer and better man.

First of all, whisk the whites (a bit of salt, only a bit, helps)

Melt almond, sugar, lemon and vanilla

Add the yolks one by one.

After add the whites but not melt too much.

Put in the oven (180 degrees) for 30 minutes more or less, to be sure if it is absolutely cooked burst it in the middle with a fork or a needle if it left clean that means the Gató is ready.

I recommend to cool it like that.

If you prefer the wallnut then use orange instead lemon.
