December 2, 2008 in Cocina, vegetables

When people move always lose things. When I moved from Joomla to Worpress I lose a lot of “things” as sample the famous bitter orange marmalade recipe. I say famous because surprisingly some people has claimed for it

Well here it is the first one. If nothing happens tomorrow I get you the second one.

Really the world is full of strange people.

At home we have an orange tree, a beautiful orange, specially when orange fall down and my husband run over it with the car. Our oranges are beautiful, big but also bitter, very bitter.

Nobody can resist the temptation bricklayers, sisters-in-law even the supermarket’s delivery boy. They  get one in secret and immediately they spit it because nobody can hold that taste.

To employ it for playing with the dog don’t was a solution because my dog is a dog but not stupid.

Looking to extract some benefit every year we make marmalade. To be exactly my husband makes marmalade

Every year he makes new experiments but only two got cross the kitchen’s doors.

OK here it is the first one.

Depending on the orange weight and your coking utensils size the quantities required will be:

For every oranges Kilogram (If you have only One kilogram, forget it!, it’s better going to the supermarket) we need one lemon, two sugar kilograms, and two water liters.

Wash the oranges (it is not necessary to put it into the dishwasher).

Put the oranges into a pan and cover them with water. When water comes to the boil  turn the hire down and cook over a low heat during two hours. Later let it settle during twelve hours more.

Bring the oranges out from the liquid and cut it on segments, let the pips into the boiling liquid.

Grind the pulp and set aside and cut the peel as fine as you can.

This is a good moment to suggest you the possibility to go to the supermarket.

OK follow. Boil the cooking liquid with the pips fifteen minutes more. Later put the liquid (without pips) into another pan where we will make the marmalade, if you feel like even.

Now is the moment to add the sugar, heat it and stir it. When sugar has been dissolved add the pulp pecked, the peel the lemon juice and boil it.

When it comes to the boil turn the hire down and let it cooking half one hour more.

When it is cold you can put it into the jar with nice labels or not as you wish.

Washing oranges, boiling, peeling, cutting, settling, and boiling again total: sixteen hours more or less. Easy

See you
