I am absolutely imbued on Christmas preparations. Today I spent just all day in the kitchen. The result has been:
24 cannelloni (I had some leftover in the fridge and I need more space
Two rabbit “a la Cazadora” (hunted rabbit more or less)
I have reduced four liters of Módena balsamic vinegar (sometimes I need to feel myself a bit sophisticated)
I coated four kg onions in caramel to be served with duck I will cook tomorrow for St. Esteve day dinner.
Also I cook a Catalan Christmas soup (abbreviated version that was our dinner today) and also a lot of cookies. To be exactly I cooked 94 cookies of three different kinds. These are my favourite.
To cook it you will need:
250 gr black chocolate
60 gr. butter
100 gr. sugar
210 gr flour
1 baking powder spoon
1 bit of salt (just nothing)
and caster sugar (azúcar glass).
First of all smelt the chocolate with the butter.
At the same time mix the sugar and the two eggs.
Add the butter with the chocolate, never hot.
Mix it. To do that you can use any technologycal kitchen tool but, in my opinion it is not necessary.
Add the flour with the baking powder sfited..
It seems stupid but it is very important.
That would be the result.
Now yo can go for a walk with the dog, clear the garden of weeds or to have one’s nails done because “that” must rest during one hour in the fridge until it has more consistence. Like that..
Now is the moment to turn on the oven, 180 degrees. While the oven is heating we do that.
Approximately a nut size ..
Roll the chocolate ball with sugar (glass)
Mash them a bit. Like that .
Sure this is a sin, a great and sweet sin..
